Set the oven to broil. Spray the baking sheet with nonstick cooking spray.
Cut zucchini into small circle slices (the thinner you slice them, the more your zucchini will end up like “chips”).
Melt 2 tablespoons coconut oil in the microwave.
Place zucchini slices on the baking sheet. Brush coconut oil over slices or drizzle evenly.
Broil in the oven for 15-20 minutes or until “chips” are crispy to your liking.
