Fig & Arugula Salad

Ingredients
  

  • 1 fresh chicken breast cutlet 6-8 oz
  • 3 fresh figs quartered
  • 3 c arugula
  • 2 tbsps toasted pine nuts
  • ΒΌ c fat-free shredded mozzarella cheese
  • Balsamic vinegar dressing

Instructions
 

  • Preheat skillet to medium-high heat.
  • Cut chicken into cubes. Add to skillet and cook until the inside is no longer pink.
  • Dress with balsamic vinaigrette dressing.
