Gluten-Free Chocolate Peppermint Protein Cookies

Ingredients
  

  • 2 c coconut flakes
  • 6 tbsp of LadyBoss LEAN ®
  • 2 tbsp cocoa powder
  • 10 tbsp maple syrup
  • 7-9 drops peppermint extract/oil

Instructions
 

  • Preheat the oven to 300 degrees.
  • Place all ingredients together into a bowl and mix well, though be careful not to overmix.
  • Scoop tablespoon-sized cookies onto your cookie tray.
  • Gently press the cookies down to flatten.
  • Makes approx. 18 cookies.
  • Bake for about 15 mins, or until cookies are golden brown.
