Sift together coconut flour, protein powder, baking powder, and salt.
Whisk together the melted coconut oil, egg, and vanilla.
Combine the wet and dry ingredients.
Mix until the dough is fairly well-blended.
Cover and place in the refrigerator for approximately 20 minutes.
Preheat the oven to 325 degrees.
Line a baking sheet with parchment paper (or spray with cooking spray).
In a small bowl, mix the cinnamon and xylitol.
Shape dough into small balls (about 1.5 tbsp size).
Roll in cinnamon/xylitol mixture.
Place cookies on the baking sheet.
Flatten cookies into desired shapes.
Bake for approx. 10 minutes.
Remove from the oven and cool for 15 minutes.
