Mix all the ingredients in a large bowl.
After the mixture becomes “clumpy,” scoop tablespoon-sized cookies onto a parchment paper-lined baking sheet.
With the back of a spoon, gently flatten each cookie to about ½ inch thick.
Once you’ve shaped the cookies, place them (while still on a parchment-lined baking sheet) in the refrigerator for 30-45 minutes to allow them to set.
