Chocolate Protein Bar Recipe

A good homemade protein bar doesn’t have to be 90% peanut butter. This recipe is nut-butter-free and delivers a delicious taste as well as tons of nutrients.

Ingredients
  

  • 1 ¼ c gluten-free rolled oats
  • ½ scoop LadyBoss LEAN
  • 8 pitted Medjool dates
  • ¼ c sugar-free maple syrup
  • ½ tsp vanilla extract
  • ¼ c almond milk
  • A pinch of salt
  • 8 oz dark chocolate chips
  • 1 tsp coconut oil

Instructions
 

  • In a food processor or blender, process oats until it becomes a fine powder.
  • Add dates, protein powder, maple syrup, vanilla, and salt. Pulse until well-combined. (Mixture should be tacky, but not sticky… add more protein powder or milk to get the desired consistency).
  • In a small prep bowl, combine chocolate chips and coconut oil.
  • Microwave in 20-second intervals, stirring between until chocolate is completely melted.
  • Press oat and protein mixture into an 8x8 parchment-lined baking pan.
  • Spread chocolate mixture over the top.
  • Refrigerate 2-4 hours, or until chocolate is set.
  • Cut into 4x2 squares.
