We know, just hearing the mention of “sugar-free cookie recipes” immediately paints a picture of pale imitations of the real cookies we crave and love.  Alas, our healthy sugar-free cookie recipes not only taste delicious, but they are also good for you.  We have taken a healthy spin on the classics, including sugar-free sugar cookie recipes to sugar-free peanut butter cookies. 

But how can a cookie be good for you?

Well, by eliminating the sugar and supplementing our LadyBoss LEAN®, these sugar-free cookies are packed with essential vitamins, minerals, and protein.   So break out the cookie sheet, preheat the oven.  It’s time to get baking.

And yes, there are a lot of sugar-free cookies good for diabetics out there.  Nevertheless, while these cookies are sugar-free, you should check with your doctor regarding any recipe before indulging.

Sugar-Free Sugar Cookies

I mean seriously, who doesn’t love a good sugar cookie? But, they don’t offer a ton of nutritional value. So these cookies made with LadyBoss LEAN are both delicious and nutritious!

Sugar-Free Sugar Cookies

Equipment

  • Oven
  • Baking sheets
  • Medium-size bowl

Ingredients
  

  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 c butter vegan
  • 2 3/4 c flour almond
  • 1/2 c Stevia
  • 1/2 c LadyBoss® LEAN
  • 1 large egg

Instructions
 

  • Preheat the oven to 350°F (180°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Combine the flour, baking soda, baking powder, and salt in a medium-sized bowl and set aside.
  • Cream the butter, Splenda, and LEAN together in a large mixer bowl until the mixture is light in color and fluffy. Add egg and mix until combined.
  • Mix the vanilla extract in well.
  • Add the dry ingredients and mix until the dough is well combined. It will be thick and should not be sticky. Do not over mix. Once it’s well combined, use a rubber spatula to help it come together to form a more cohesive ball.
  • Create 1 1/2 tablespoon-sized balls of cookie dough. Gently roll into a ball. Set the balls on the baking sheet. (If using a cookie cutter, use the rolling pin to flatten dough. Should be about 1/4 to 1/2 inch thick)
  • Bake cookies for 7-8 minutes. The cookies will spread, and the centers will look soft but should look done. Remove just before the edges begin to turn golden. Don’t over bake. The cookies will be a little puffy when you take them out of the oven but will fall a bit as they cool.
  • Remove from the oven and cool on baking sheets for 4-5 minutes before transferring to a wire rack to cool completely.

Sugar-Free Snickerdoodle Cookies

With just as much flavor as you remember from Grandma’s famous cookies but packed with nutrients!

Ingredients
  

  • ¼ c coconut flour
  • 2 ½ scoops LadyBoss LEAN®
  • ¾ tsp baking powder
  • ½ tsp sea salt
  • 1 large egg
  • 1 tbsp coconut oil melted
  • tsp pure vanilla extract
  • 2 tsp ground cinnamon
  • 2 tbsp xylitol

Instructions
 

  • Sift together coconut flour, protein powder, baking powder, and salt.
  • Whisk together the melted coconut oil, egg, and vanilla.
  • Combine the wet and dry ingredients.
  • Mix until the dough is fairly well-blended.
  • Cover and place in the refrigerator for approximately 20 minutes.
  • Preheat the oven to 325 degrees.
  • Line a baking sheet with parchment paper (or spray with cooking spray).
  • In a small bowl, mix the cinnamon and xylitol.
  • Shape dough into small balls (about 1.5 tbsp size).
  • Roll in cinnamon/xylitol mixture.
  • Place cookies on the baking sheet.
  • Flatten cookies into desired shapes.
  • Bake for approx. 10 minutes.
  • Remove from the oven and cool for 15 minutes.

No-Bake Sugar-Free Peanut Butter Cookies

What’s better than a no-bake dessert that tastes yummy and is good for you? Hint: nothing.

No-Bake Sugar-Free Peanut Butter Cookies

Ingredients
  

  • 1 c of peanut butter
  • 1 1/2 c of oats
  • 1/3 c of sugar-free syrup
  • 1 tsp of cinnamon
  • 1 1/2 scoops of LEAN

Instructions
 

  • Mix all the ingredients in a large bowl.
  • After the mixture becomes “clumpy,” scoop tablespoon-sized cookies onto a parchment paper-lined baking sheet.
  • With the back of a spoon, gently flatten each cookie to about ½ inch thick.
  • Once you’ve shaped the cookies, place them (while still on a parchment-lined baking sheet) in the refrigerator for 30-45 minutes to allow them to set.
